I’m still on a smoothie kick! They’re such an easy breakfast for me, because I can drink them while I walk around the kitchen getting more cereal for the kids, cleaning up spills, and setting out school outfits. I would love to get up half an hour before the kids and make a great, sit-down breakfast… but let’s be honest, even if that happened a few days a week it’s certainly not going to happen seven!
This morning I wanted some extra protein in my smoothie, so I made a chocolate peanut butter breakfast smoothie. Don’t be fooled by the “chocolate” – it’s still healthy! I don’t add any sweeteners to my smoothies because I actually like the slightly bitter taste of unsweetened chocolate. If you decide to sweeten yours, I recommend a tablespoon of honey.
The Recipe
1/4 cup rolled oats
1/4 cup peanut butter
2 T Chia seeds (or ground flax seed)
2 T cacao powder (preferred over cocoa powder, but cocoa is a fine subsitute)
2 bananas
1 cup ice
1 cup almond milk
1/2 cup water
Add ingredients to blender in the specified order, blend until smooth, and then sweeten to taste (if desired). Garnish with a few chocolate chips for a gourmet feel to the start of your day 🙂
Makes two large servings.
